Cut the chicken into bite-size pieces and pat dry with paper towels.
In a bowl, whisk together the flour, cornstarch, salt, pepper, garlic powder, and paprika.
In a separate bowl, beat the eggs.
Dip each chicken piece into the beaten eggs, then coat thoroughly in the flour mixture.
Heat about 1 inch of oil in a large skillet over medium-high heat.
Fry the chicken bites in batches for 4–6 minutes, turning occasionally, until golden and crispy.
Transfer the cooked chicken to a paper towel–lined plate to drain.
In a saucepan, melt the butter over medium heat.
Add the minced garlic and cook for 1 minute until fragrant.
Stir in the honey, soy sauce, and red pepper flakes.
Let the sauce simmer for 2–3 minutes until slightly thickened.
Add the fried chicken to the sauce and toss until fully coated.
Serve immediately and garnish with sesame seeds or green onions if desired.
